Shout outs to you all!!!

Well, I'd love to give some shout-outs to some readers of my blog.. Hey California Lianna Thanks for the comment. You are one lucky lady to have such a fun sister, like Lynn, I just love her!!

Hello to Carol in Florida!! You look like a very hip lady. Glad to be in the same celiac club as you. Thanks for the comment. I am sure we would be friends if we lived closer...

Now I need to tell everyone thank you for reading my blog. It is so fun to hear from everyone. All the comments are very appreciated. Love to all.

So, I made a very yummy soup last night. I will give you the recipe for it because that is what I do...



Mashed potato soup


1/2 cup finely chopped onions
1 Celery Stalk
1 Carrot, grated course
2 Cups chicken broth
pinch of rosemary- crumbled
2 1/2 cups mashed potatoes
1 teaspoon white wine vinegar
2 Tablespoons snipped parsley leaves
Salt and Pepper to taste



1.In a large pot cook the onion, celery, and carrot in butter over medium- low heat, stirring until the veggetables are tender.

2.Stir in the broth and rosemary, bring to boil. Wisk in the potatoes, a little at a time, bring the soup to boil again, stirring add the vinegar, parsley and salt and pepper to taste.
Makes 4 servings.

Speaking of beautiful things,
my hand is not! I have the winter spot on my hand. Can Anyone tell me what this is? Is it just exema? I have a really hard time getting rid of it, but it is only there in the winter... never the summer. It's itchy and scaly and looks a bit like a burn before it heals. I think it is the dry cold in Idaho that makes it this way. It could also be a reaction to gluten or something. Let me know your thoughts.

Two year olds Rock!!

I must say...being two has got to be so much fun! My little one gets excited over everything he has a great sense of humor and everything is so new to him. I can't imagine the joy I would have at looking at everything for the first time. I have some biases now and everything has a proper order... but just imagine if you will the first time you felt snow, sand, wet paint, all those wonderful things you now know. Can you think about what metal tastes like? How about cement? Weird huh? I know what almost everything tastes like, because I probably put it in my mouth at some point in my life. Take today and look at the world again. Maybe like my two year old... Today he noticed that he had a dog on his shirt. He's showing it to me.

Snow Wonderful...

My Grandpa is still in the hospital, but he is doing well and doesn't want to give anyone else his illness so I guess I won't be visiting him. Thanks for the good ideas though!


This is what the world around me looks like today! Snowy and windy and very beautiful. These are the sage brush that blew into our front yard and are now collecting lots of snow.
We are staying inside today. What do we do ?..?? Trapped inside is a perfect day for GF playdough!!

Don't they look happy? Here is the easy recipe.

Play dough
1 Cup Salt
1/3 Cup water
Heat over med-high heat until hot and bubbly-or until the water starts to evaporate.
Remove from heat and add:
1/2 Cup Cornstarch
1/4 Cup cold water
a few drops of food coloring
mix this until it all clumps together. You may want to set it back on the burner if there is too much water in the mix. Let it cool and play!!!!

They will eat it, mine did...Yuck!

Yea!!! It's working!!

I feel so good today!! The Vitamins that I am taking are totally working and I feel like I did when I was younger...You know, clean house, feed children, happy wife.....It is so nice!! I just need those awesome legs of yesteryear and I'll be seventeen again!! hA hA!! I am so funny.

I am teaching a new class at the YMCA today. It is called Group Active, and I love doing it. The class we had this morning was totally packed. Even my good buddy Rob came. Go Rob! He was sweating it up with the rest of us. I think it is such a fun power packed hour of cardio, strength flexibility, and balance. I smile the whole class long, even though I am totally out of breath by the end of cardio. Eh... Who needs to breathe? LOL If you live close, come get a pass and try it out.

My grandpa is in the hospital today. I guess he wasn't feeling well and got a bit dehydrated. I am going to visit him tomorrow. I'll bring him something to do. Hospitals are so boring. Any Ideas...He's about 84 years old. Color books probably are not an option.

empower.....to make powerful

I am delighted to let you know that I called the empower plus people. I told them my symptoms and they were very understanding and patient. I told them about my celiac diease and how at times I have trouble with absorption. They would like me to call if I am having one of those days. They advised me to take 15 pills a day(five at each meal) while I am adjusting to not taking other meds. then I can back it off some. There are some drugs you have to wean yourself off of. I am trying to cut off my one medication cold turkey...it's making me really tired. I am a little achy in the brain at times, but I hope that is a side effect of not taking Lexapro anymore...after a year and a half. Wow! That's a long time. I have a hopeful heart that this will work and my depression will not send me to bed every chance it gets. I am still super excited to see the change it will have on me. Let me know if you notice anything wierd.... LOL that would be just me now wouldn't it?

Time to return to me...

Okay, so if you read those last few blogs you should know that it is a cycle with me and now I am at the end. HOORAY!! I can return to my normal self and continue on the happy road to cooking and baking and being a good mom. I am glad I wrote it down because I can see how I was feeling in my blogs. Now I can write on the happy side of me. I sound so schizophrenic!! Depression is one of the many side effects of having Celiac disease.
Well I have just started a supplement called empower plus. It is a bunch of Vitamins and minerals that work really well for me so far. Mind you it has only been one day and I am only taking two in the morning instead of the recommended eight (four in the morning and four at night) , but I am feeling normal...a little tired from staying up last night.... but pretty normal. I woke up with a cold and it has pretty much gone away too. Yeah yeah yeah!!
The kids go to school on Thursday. I am counting the days. Not that I don't love my children, but they do so much better when they have school to point them in a strong educational direction. #1 boy is doing good at home, but #1 girl is kind of climbing the walls. #2 boy is having a good time bossing us all around in a language no-one, but he understands. It is cute until he really wants to drive his point home and gets up in your face about it. I love them all for such different reasons. Well, happiest of New Years to you. I hope this year will be the year you will be happy and surrounded by love and friends.
